Ranch Chicken
My daughter loves Ranch Chicken - it is so easy to make and is pretty good also.

Chicken (uses whatever parts you like - I have made it with legs, breasts, leg quarters) You can remove the skin if you prefer.

Powder ranch dressing mix (I buy it by the bottle at Sam's)

Roll chicken in Ranch dressing powder until well coated. Place in shallow cooking pan sprayed with non-stick spray or oiled. Cook at 350 until chicken is done.

Chicken Pot Pie
2 cups cut up cooked chicken or
1/3 c onion, chopped
1/3 c. butter
1/3 c. flour
1/2 tsp salt
1/4 tsp pepper
1 3/4 c. chicken broth
2/3 c. milk
1/2 c frozen hash-brown potatoes (the ones that are little squares
2 c. frozen mixed vegetables
2 Frozen pie crust

melt butter, add onions, flour, salt and pepper. Cook over low heat, stirring constantly until mixture is smooth and bubbly; remove from heat. Stir in broth and milk, heat to boiling; stirring constantly, boil 1 minute. Stir in chicken, vegetable and potatoes. Pour into pie crust lined pie plate and cover with second pie crust, seal edges of crusts. Cut slits in top for ventilation. Cook at 425 until crust is browned, 30 -35 minutes. This is another family favorite.
