guacamole enchiladas

ingredients-

advacados

Grilled chicken breast ( fajita seasoned and chunked)

corn tortillas

velveta cheese

1 can rotel tomatoes

1 can green enchilada sauce

_______

squish advacados to make guacamole ( do not add any ingredients)

mix advacados with chuncked chicken breast and rotel tomatoes ( drained)

roll this mix up in the corn tortillas and place in the pan

--------

for the topping melt velveta with green enchilada sauce.

put your enchilladas in the oven without the cheese sauce on top for 20 minutes to really warm them up

pull them out and put cheese sauce on them

it is really good

it is and really pretty easy- just make sure you have some ripe avocados!

Just wanted to let you know, Barbie, that my friend & I tried this recipe last night and it was deeeeelishus!! LOL

I didn't use fajita seasoning on the meat, but it was still fantastic! I think we're going to have this at my family's Christmas dinner. (My mother has vetoed turkey & dressing for Christmas for the past 3 or 4 years. LOL)
