I am wanting to cook some homemade Potato Soup for dinner Sunday. However, the recipes that I have found do not sound right. They all seem to include cheese. Does anyone have a good recipe for Potato Soup?

All Potato Soup I have ever eaten have had some sort of cheese in them. You might want to try looking up Potato Chowder also.

Potato Soup sounds perfect for this weekend Daddy's Girl. *This is a "Taste of Home" recipe... the carrots were a little different for my family, but they really like it. *You can leave the carrots out if you want, it's good either way. *It doesn't have cheese, just good old fashioned potato soup.

Hearty Potato Soup

6 medium potatoes, peeled and cubed
2 carrots, diced
6 celery ribs, diced
2 quarts water
1 onion, chopped
6 tbl butter or maragarine
6 tbl all-purpose flour
1 tsp salt
1/2 tsp pepper
1 - 1/2 cups milk

In a large pot, cook potatoes, carrots and celery in water until tender, about 20 minutes. Drain, reserving liquid and setting vegetables aside. In same pot, saute onion in butter until soft. Stir in flour, salt and pepper; gradually add milk, stiring constantly until thickened. *Gently stir in cooked vegetables. *Add 1 cup or more of reserved cooking liquid until soup is desired consistency. *Yield: *8-10 servings (about 2 - 1/2 quarts)


Here's one you might want to try sometime with cheese, it's "Baked Potato Soup" like they serve at Chili's and it's really good:

Baked Potato Soup

2/3 cup butter or margarine
2/3 cup all-purpose flour
7 cups milk
4 large baking potatoes, baked, cooled, peeled and cubed (about 4 cups)
4 green onions, sliced
12 bacon strips, cooked and crumbled
1 - 1/4 cups shredded cheddar cheese
1 cup (8 ounces) sour cream
3/4 tsp salt
1/2 tsp pepper

In large Dutch oven melt butter. Stir in flour; heat and stir until smooth. *Gradually add milk, stirring constantly until thickened. *Add potatoes and onions. Bring to a boil, stirring constantly. Reduce heat; *simmer for 10 minutes. *Add remaining ingredients; *stir until cheese is melted. *Serve immediately. *Yield: *8 - 10 servings (2 - 1/2 quarts)

Thanks to both of you! I am going to try a Baked Potato Soup recipe that I found. Will let you know how it turns out.

Speaking of Potatos, my mom when I was young (many, many years ago) used to bake some potatos then take them out and cut in half length ways , scoop the potato out of the peel and place in a bowl...she would then add butter, bacon and cheese, mix it all together then put it back into the peel top with more cheddar and put back into the oven until the cheese was melted...those things were awesome!

Twice baked potatoes! Those are good! My kids love those! Maybe that's an idea for later this next week....Will have to wait and see.

Fried Potatoes with Boudain

Not an exact science, never have cooked that way and probably never will


nuke 4-5 medium size potatoes partiallly. Pan brown a good amount of cut up onions, a clove garlic, maybe some bell pepper, or whatever you may have in fridge, in a bit of olive or veg oil. coll, tators then peel and quarter. Add to the simmering skillet and turn down. Don't overdo. Add season salt, coarse ground pepper, parsley flakes..make sure it's not sticking...turn down..cover to steam tators. 10-15 minutes prior to add sliced boudain sausage. to let taters aquire boudain flavor...

I made a potatoe soup years ago that was good.

It had diced Ham
diced potatoes
corn
milk
butter or margarine
all-purpose flour
I also made some homemade noodles to add to it. using flour and egg w/dash of salt.

the soup was AWSOME. Sure wish I could eat it now, but I would have to omit the potatoes. May have to try it with something else that I like.
