I'm making peanut brittle for thanksgiving. This is a recipe I am using. I used it last year and it did well. It's from the Nut Factory. Anyone else have any good peanut brittle recipes?

Traditional Peanut Brittle
2 cups sugar
1 cup light corn syrup
1 cup water
2 cups raw Spanish peanuts
1/2 tsp. salt
2 Tbsp. butter
2 tsp. baking soda

Heat and stir sugar, syrup and water in a heavy 3-quart saucepan until the sugar dissolves. Add salt. Cook over medium heat to soft ball stage (234 degrees). Add peanuts at 250 degrees. Cook to hard crack stage (290 degrees), stirring often. Remove from heat.
Quickly, stir in butter and soda. Beat to a froth for a few seconds. Pour at once onto 2 well-buttered 15-1/2x10-1/2x1-inch pans, spreading with spatula. If desired, cool slightly and pull with forks to stretch thin. Break up when cold.
Yield: About 1-1/2 pounds of peanut brittle.

All I know about Peanut Brittle is that if you aren't prepared when you put that baking soda in there you are in real trouble. I don't know why they put the coke and mentos thing on the news, they should have showed someone making peanut brittle when the baking soda is added. Now that is an explosion!!!

That is brittle recipe that I use, Ptl. I think it is a very good recipe. I have seen it made in the microwave but I have never tried it. I have a great and easy divinity recipe made with marshmallow creme , if any one likes divinity. It is 1c water, 1c sugar and 1/2 c karo syrup, boil until it spins from the spoon. Then pour it over 1 jar of marshmallow creme and add the amount of pecans that you like. Then hand beat it until it cools enough to start to thicken, then spoon out in drops on wax paper.

Gate, I love divinity. I have got to try that recipe. Do you use a double boiler?

Sheesh, Ptlj, I goofed on the divinity recipe. I was trying to do it by memory, but it failed me. I looked the recipe up today and here it is as it should be.....2c sugar,1/2c water, boil to a hard boil and pour it over marshmallow creme, add 1 tsp of vanilla. Beat until creamy then add pecans to your liking and dip out onto wax paper. Sorry, I hope you hadn't tried it yet.

Creamy Peanut Patties....2 1/2 c sugar, 1 c milk, 2/3 c Karo syrup, 3 c peanuts. Bring to a boil and stir until sugar is melted. Lower the heat to simmer and cook until a soft ball stage {appr. 1 hour} Stir occasionally. Remove from heat and add 1 tbs. of butter, 1 tbs of vanilla and some red food coloring. Beat by hand until creamy and looses its shine. Then spoon onto wax paper. These are delicious and creamy not crunchy.

We love the peanut brittle. One time I substituted pecans for the peanuts, and found we like it even better!

how much marshmallow creme what size jarI can't remember, GB2, but it is not the tall jar it is the short jar. I just can't remember the oz.s and I don't have a jar here. Just get the smaller jar.
